DRY OLOROSO SHERRIES

SIR,--How wonderful to see someone saying what I have been crying in the lone vineyards for twenty years : as people get more sophisticated, drinking-wise speaking, they are bound to like the drier sherries.

But nu. Mr. Adrian! Your Olorosos if dry will never be all that cheap; basically a young wine which has been denominated as an Oloroso, has failed to make the grade; i.e., not good enough to become a Fino. A good dry Oloroso therefore is one which has had its rough edges smoothed away by time in cask.
