Sir: It is true that in the convict states kangaroo meat may be purchased as pet food. But in the enlightened south it is readily available from butchers for human consumption. Indeed `skippy' bordelaise is currently one of the most popular items on Adelaide menus. Digby Anderson (Im- perative cooking, 19 September) should be reassured that some of us down under are doing our best to keep the vegetarian menace at bay.
