WATERCRESS

SIR,-1 must make a plea for the keeping qualities of watercress which Miss Elizabeth David has found to be little beyond one day. By washing watercress in cold water, draining it and keeping it in a plastic bag near the freezer in the refrigerator, it Is quite possible to keep watercress in good condition for several days, even from a shop. Watercress which I bought six days ago—Golden Springs water- cress from Waddock Farm in Dorset--is still per- fectly crisp and shows no sign of yellowing or anY other deterioration, and we are still enjoying it in salads.
