As an offset to this British-Indian attempt to persuade the

American people to drink more tea I should like to see a national campaign in this country to teach British housewives how to make good coffee. Ask American or Continental visitors what they think of ordinary British-made coffee, except in a few of the foreign-run hotels in London and in our large cities. Their verdict would be unprintable ! Good coffee is just as easy to make as bad coffee, but for some reason or other, unfathom- able to most of us, it is beyond the power of the average

British cook.
