BEET AND CANE SUGAR [To the Editor of the SPECTATOR.]

Sin,—With all my doubts (or suspicions ?) I have never doubted that the best beet sugar was perfectly wholesome, and from Mr. Ogilvie's letter in your issue of the 18th inst. I suppose I must assume now, though he does not actually say so, (1) that, bulk for bulk, beet sugar is as sweet as cane, (2) that the syrup of beet sugar is not injurious to bees, and (3) that in some affections of the heart beet sugar is just as efficacious as cane. Whether beet grown in England will retain such sweetness as it possesses can only be proved by time.—I am, Sir, &c.,
