No ENGLISH BACON.

The following letter reaches me from a distinguished soldier who has just retired from Indian service to a country house in the Eastern counties. His questions are worth the attention of both English farmers and distributors. Re writes, in effect : "We cannot in this district get English bacon at all and have been constrained to buy Danish. Where English is procurable it is 5d. a lb. dearer and not so good as the Danish, which is less wasteful in cooking and more pleasant to the taste. It is surely an anomalous situation, when English farmers are in such straits, that English bacon is either not procurable, or where procurable, a worse and much dearer product. Why is this ? " The answer is that the Danish farmers produce one standard pig bred for the purpose, and work through co-operative organizations. The British farmer breeds all sorts of pigs and refuses to guarantee any -regular supply or type to the bacon factories that exist.
