Artichokes Artichokes are a useful vegetable to have in the

garden. The Chinese should be planted in drills six inches deep, a foot between plants and two feet between rows. Jerusalem arti- chokes do better in light soil at a depth of three inches, with eighteen inches between each, and drills three feet apart.
