siR, — In the recipe (in the Spectator of February 23rd) for

"making excellent coffee in three minutes," two omissions, certainly one, seem to make the recipe (as given) valueless :— (1) No proportion of chicory to beam is given • (2) the quart jug is faith with. hot water whether coffee is being made for two
