Care of Leeks

The leek is a vegetable more h g ught of in the north than in the south perhaps. The northerner often uses it in broth, and farming families used to be fond of chopped leek in mashed potatoes. This is a good time to attend to leeks, for they grow well late in the year. Yellow leaves should be trimmed and the plants can be dibbled into the patch when the potatoes are lifted. IAN MALL
